Are you getting all set to start carving your pumpkins for Halloween? I have the best pumpkin seed recipe for you!
This is my all-time favorite pumpkin seed recipe. I got it from one of Kennedy’s teachers a few years ago and we’ve been using it ever since.
It’s delicious and addictive for sure! Make sure you have lots of other people around to help you eat these seeds when you make them, or you may end up eating them all yourself!
This is a recipe for quite a large amount of seeds – from 6 pumpkins. The good thing about this is that you can really just eyeball most of the amounts, so if you have less seeds than the amount from 6 pumpkins, just reduce your amounts of the recipe ingredients, but don’t worry too much about it. I used about 2-2.5 cups of the pre-roasted seeds.
The Best Pumpkin Seed Recipe
So, you start off by carving your pumpkin(s) and then setting aside all of the seeds.

If you’re like us and haven’t carved your pumpkin yet, you can just get something like these:
I won’t tell anyone you cheated, don’t worry.
If you do decide to use your own seeds straight from the pumpkin, clean them off and roast them in a 250 degree oven for about 45 minutes to start out with, then let them cool.
Next, you’ll make your pumpkin spice flavoring mixture.
In a bowl, mix together (about):
-2 Tablespoons of Sugar
-1/2 a Teaspoon of Pumpkin Spice (Here’s how to make your own)
-1 Teaspoon of Cinnamon
-1/4 Teaspoon of Salt
Leave it in the bowl for a bit until we’re ready for it.
Now the Magic Begins
Put about 2 tablespoons of oil into a frying pan and add about 4-5 tablespoons of sugar. I find a little extra sugar doesn’t hurt either. 🙂
Add the roasted seeds to the frying pan and turn it on to about medium heat.
I’ve never done anything like this before and it was pretty neat to watch. Keep heating the seeds and stirring the contents of the pan together with a wooden spoon for about 5 minutes. Soon you’ll have something that looks like this!
It’s really neat to watch the sugar melt and start browning and sticking to the seeds.
Once you think it looks like all the sugar granules have melted and stuck, dump everything in a bowl.
Sprinkle in some of your spice mixture while everything’s still hot and give it a good toss to coat everything.
There you go! Done!
This is a super fun activity to do with kids, or if you’re like me and easily amused by things like this, feel free to do it all by yourself.
Just make sure you have helpers when it comes to the eating part!
