It’s a new year, the kids have been back in school for a little bit now and we’re settled back into our normal work and gym routines and it feels pretty great. Work-wise, we’re a little busier now than we were before the holidays because we’ve kind of jumped head-first into a few different projects. It’s fun, but time is a little tight. When it comes time to take a break and have some lunch, I always want something quick and of course I try to keep things healthy and plant-based as well. I’ve often found myself getting into a situation where I haven’t planned anything ahead of time, so I don’t have anything healthy ready to go. What happens usually in that situation is that I try to scrounge up whatever I can find in a few minutes and it’s usually not really filling enough. Then of course, I’m starving again pretty soon after lunch. That’s where this clever (if I do say so myself) recipe for plant-based protein powder thai peanut sauce comes in! Wow, try saying that ten time fast! 🙂
The Magic of Protein Powder Thai Peanut Sauce
When you make a meal that includes a sauce, usually you think of putting together a bunch of filling and nutritious ingredients – veggies, starch, protein – and then using the sauce to top it all off and make all that healthy stuff more appealing. The amazing thing about this sauce is that the sauce is the high-powered, nutritious component of the meal, at least one of them. And it comes together in a flash. Your container of protein powder may suggest that it should be incorporated into recipes using a blender, but I found that the protein powder I used blended right in when I stirred it with a spoon, with no clumping whatsoever.
When you think of recipes that incorporate protein powder into them, you usually think of something like a smoothie, or maybe some other type of sweet treat. I think adding that extra boost of protein right when I need it, at lunch time, is pretty smart. And it’s delicious.
How to Use the Sauce
This is a great all-around asian-inspired sauce that you can use anywhere you would normally think to use an asian sauce: On noodles, on rice, or on top of a veggie stir-fry. My favourite so far is just a quick, simple lunch that I throw together with glass noodles, maybe a little frozen broccoli, and a few sliced green onions. There really are so many possibilities though!
I used a plant-based protein powder made with peas from Naked Nutrition called Naked Pea, as well as their Naked PB powdered peanut butter, which is vegan as well. Try this protein powder Thai peanut sauce for a quick plant-based lunch or as the perfect sauce to elevate a veggie stir fry!
- 2 scoops Neutral-flavored plant-based protein powder (I used Naked Pea Protein Powder)
- 1 scoop Powdered peanut butter (I used Naked PB)
- 2 tsp Cayenne pepper hot sauce
- 3/4 tsp Garlic powder
- 2.5 tsp Maple syrup (Or sweetener of choice)
- 2 tsp Soy sauce
- 1/4 tsp Ginger powder
- 4-5 oz Warm water

In a small bowl, combine all the ingredients and stir until smooth.

Serve the sauce on top of warm noodles, rice, or stir-fried vegetables.

To reheat the sauce, stir in a small amount of warm water and serve on top of warm noodles, veggies, etc. Microwaving the sauce on top of cold noodles sometimes causes it to thicken a little too much so it's better to allow the warmth of the food to heat up the sauce.
