These soft and chewy sprinkle cookies are the perfect way to add a little extra colour and fun to your cookie tray this Christmas.
I’m always looking for ways to add more fun and color to my Christmas cookie trays. Sometimes things can get looking just a little brown overall when it comes to baked goods and some of our favorite chocolate treats so it’s nice to add a pop of color to make things look festive. You know that the kids will definitely go for anything with sprinkles first. 🙂 These soft and chewy sprinkle cookies are a great sprinkle delivery system, but they’re also just a really delicious, soft sugar cookie type of cookie that everyone will love. Of course, Christmas is a very cookie-centric holiday, but you could easily swap out the sprinkles and use them for birthdays, potlucks, or any other holiday with great success.
Ingredients Needed for the Soft and Chewy Sprinkle Cookies
You’ll need:
- Flour
- Baking soda
- Corn starch
- Salt
- Butter (or plant-based substitute)
- White sugar
- Vanilla
- Eggs (or plant-based substitute)
- Sprinkles
Simple and good. 🙂 I always use the plant-based options in my baking and these worked out perfectly with this type of egg substitute, and Becel brand unsalted plant-based butter sticks.
Making the Soft and Chewy Sprinkle Cookies
Start out by creaming together the room temperature butter and the sugar in the bowl of a stand mixer, then add in the vanilla and the eggs and mix well at a medium speed until everything blends together nicely.
Combine the dry ingredients in a medium bowl, then slowly add the dry ingredients to the butter mixture in the stand mixer with the mixer running on low. Keep mixing until everything is well combined. Chill the dough in the fridge for an hour and then you’ll be ready to work with it.
Scoop out about 1.5 tablespoons of dough, roll it into a ball, then dip the ball into a small bowl of sprinkles, coating it on all sides. Place the cookies on a silpat– lined baking sheet about 1.5 inches apart then chill the prepared dough balls on the sheet for about five minutes before baking. This helps them keep their puffy shape a little better and not flatten out completely when baking. I’m able to fit 8 cookies on a standard half-sheet without them running into each other with this recipe.
Cool the cookies for about three minutes on the baking sheet, then transfer them to a cooling rack to cool completely.
The cookies will be quite soft when you take them out of the oven, but once they cool you’ll agree that these are the perfect soft and chewy cookie. 🙂
Store in an airtight container at room temperature. They’ll stay fresh for three to five days or you can freeze them if you like as well!

- 2 1/2 cups Flour
- 1 tsp Baking soda
- 1/4 tsp Salt
- 2 tbsp Corn starch
- 1 1/2 sticks Room temperature butter or plant-based substitute
- 1 1/2 cups Sugar
- 2 Eggs or plant-based substitute
- 2 tsp Vanilla
- 1 cup Sprinkles

Combine the dry ingredients in a medium bowl and set aside.

Cream together the butter and sugar in the bowl of a stand mixer fitted with the paddle attachment, then add in the eggs and vanilla and mix at medium-high speed until everything is well combined.

With the stand mixer on the lowest speed, slowly add in the dry ingredients and continue mixing until everything is combined. Chill the dough for at least an hour, or overnight.

Place the sprinkles in a small bowl. Scoop out the dough in 1.5 tablespoon increments and roll into little balls. Roll the dough balls in the sprinkles until coated on all sides. Place the cookies on a silpat-lined baking sheet with about 1.5 inches of room between them.

Bake at 350° for about 13-14 minutes, rotating the baking sheets halfway through. Allow the cookies to cool on the sheet for about 3-5 minutes, then transfer to a cooling rack to finish cooling completely.
