Believe it or not, poultry seasoning is a very frequently used seasoning blend in my kitchen, even though I don’t often – or ever – find myself cooking poultry these days. It comes in so handy for creating cozy, comforting flavours in all of our favorite hearty, cool weather dishes like soups, stews, and stuffings, and it’s something I just don’t think I can live without. If you ever find that you’re mid-way through a favorite recipe, only to discover that your poultry seasoning jar is empty, this little recipe should help you out. You may even find that you prefer making your own homemade seasoning blend and that you prefer it over store-bought. Here’s how to mix up this simple recipe so it’s always ready when you need it.

Ingredients Needed for the Poultry Seasoning Blend

You might be surprised to learn that poultry seasoning doesn’t in fact contain any chicken or turkey at all, and is in fact just made up of a few spice cabinet basics that you probably already have on hand. I often buy larger containers of herbs and spices because it’s more economical, so making my own seasoning blends really helps to use up all the extras rather than have herbs sitting in the back of my cabinet for years and years.
To make this seasoning blend, you’ll need:
- Ground rosemary
- Ground thyme
- Ground sage
- Ground marjoram
- White pepper or Black pepper
- Freshly ground nutmeg
Traditional poultry seasoning features finely ground herbs and spices, but if you have whole-leaf varieties and prefer to use those, that will be absolutely fine. It’s your kitchen.:) If you have trouble finding any of the ground spices and herbs in your local store, you can grind them very effectively using a small coffee grinder. I would recommend keeping one grinder reserved for herbs and spices only because you probably don’t want your morning coffee to taste like powdered rosemary.

Preparing Homemade Poultry Seasoning
Once you have all your herbs and spices ground, or not, depending on your preference, measure them out into a medium bowl using the tablespoon and teaspoon sizes of your measuring spoon set. You can half or quarter the amounts used if you prefer to make less, or multiply the amounts to make a big batch in bulk.

Mix all the ingredients together until everything is well blended in a consistent, even mixture. It should be a medium to light green color, just like store-bought poultry seasoning. If you’d like to make adjustments or additions to personalize your poultry seasoning, such as adding salt, dried parsley, granulated garlic, onion powder, or crushed red pepper flakes, add those in and give the seasoning blend one final stir.

Transfer the seasoning mix to an airtight container like a small glass jar and store it in your pantry with the rest of your herbs, spices, and seasonings.

How to Use This Homemade Herb Blend

This is such a versatile aromatic blend and can be used for flavoring all types of savory meat and vegetable dishes, but it’s most famously used as the perfect seasoning for roast chicken or as a drub rub for seasoned roast turkey. I love it on a whole roasted cauliflower, in gravy for mashed potatoes or baked french fries, and in casseroles like my veggie pot pie with biscuit topping.
For a vegetarian dish, I love adding poultry seasoning to lentils like in my plant-based shepherd’s pie. I’ve also heard of people making tofu taste like chicken with poultry seasoning. I’d love to try that with some chili powder and smoked paprika for a smoky, spicy version of meatless chicken nuggets.
