The plant-based cowboy casserole: The perfect thing to bring to a Super Bowl party, or just any potluck gathering where you want something fun and indulgent that will be enjoyed by meat-eaters and plant-eaters alike!
We have some neighbours that are huge football fans and this year they’re throwing a Super Bowl party! I honestly know almost nothing about football, and I don’t think I’ve ever watched more than five minutes of a game in my life, but I love the idea of all the festivities surrounding the Super Bowl. Plus it’s honestly just a great chance for us all to get together and have another little potluck, which I have to say we’re getting pretty good at in our neighbourhood. 🙂 Anyway, the idea of this upcoming party has me thinking about the types of foods that people bring to gatherings such as this. I’ve had this idea for a plant-based cowboy casserole for awhile and I thought it would be the perfect shareable, indulgent thing to add to a Super Bowl party food table.
How to Make the Plant-Based Cowboy Casserole
First of all, I should note that although this recipe is plant-based, it’s definitely not “health food”. It’s a super indulgent treat that can be enjoyed by anyone when the occasion calls for it. It’s one of those recipes that no one will ever realize is plant-based, but that you can make if you have veggie eating friends or family coming over and want to make them something delicious and comforting during these cold winter months. This would also make a great dinner paired with a salad and maybe some (plant-based) garlic toast! But not all the time. 🙂
This casserole is really easy to assemble and will only take you about 15 minutes to put together before baking.
Basically, you just cook all of the “filling” ingredients on the stove for a few minutes, dump the whole thing into a 9×13 casserole dish, top it with tater tots (the ones we have in stores here are actually called “tasty taters”, but same thing.), then sprinkle with a little plant-based cheese. Easy-peasy-cheesy!.. or “cheezy”, rather. 🙂

- 1 Yellow onion
- 1 tbsp Taco seasoning
- 1/2 tsp Garlic powder
- 1 can Black beans
- 1 pack Plant-based ground beef substitute (or use another can of beans, maybe pinto?)
- 1 can Diced tomatoes with green chilis (such as Rotel)
- 1/2 cup Plant-based cream cheese
- 1 can Corn
- 1 bag Tater tots
- 1 cup Plant-based shredded cheddar cheese

Preheat the oven to 375. Dice the onion and sautee until translucent in a medium saucepan.

Add all other ingredients to the saucepan, except for the tater tots and the shredded cheese. Stir and cook for about 5-7 minutes on medium heat until all the ingredients are well-combined.

Dump the contents of the saucepan into a 9x13 casserole dish and spread them out evenly.

Top the casserole filling with a single layer of frozen tatertots. Then sprinkle the shredded cheese over the top.

Cover the casserole with aluminum foil and bake for 30 minutes. Then remove the aluminum foil and bake for another 15 minutes.
