Here’s a little variation on a recipe that’s really popular around the internet right now! I took the two ingredient bagel recipe and changed it up a bit so it works for a plant-based diet as well!
Have you heard of this two ingredient bagel recipe? It’s been popping up around the internet quite a bit lately and I was definitely intrigued. It’s my understanding that this recipe is somehow good for those following the weight watchers program as well, but I’m not super knowledgeable about how that works. If anyone can let us know how this recipe fits in with that, please do! 🙂
I was a little disappointed to see that this recipe calls for greek yogurt as one of the two ingredients because we try to eat mostly plant-based as much as we can. It’s hard to ignore all of the information coming out now about how much healthier it is to stick to mostly plants. You know I love a good, simple recipe trick with very few ingredients though! Luckily, I did a bit of experimenting and making a vegan version of this recipe was pretty easy.
Ingredients for the Vegan Two Ingredient Bagel Recipe
You’ll need:
- Self-Rising Flour
- Plain Coconut Yogurt (AKA Cultured Coconut Milk)
That’s it! Just two ingredients, of course!
You may have seen my post from a little while ago where I shared how to make your own self-rising flour. The great thing about doing that is that you can actually use any flour that you like! I used organic whole wheat flour for this, but you can use whatever you like. Store-bought works as well if you happen to have that on hand!
Some other optional things that you might like to use include an “egg wash” and/or some kind of seasoning on top of your bagel. To make my faux egg wash, I just used a little bit of watered-down maple syrup and it worked like a charm. It browned up just a little bit and it also helped my sesame seeds stick to the tops of the bagels. Also, since I’m in Canada, I don’t have access to a Trader Joe’s here, but I know that the “Everything But the Bagel” seasoning that you can get there is also a really popular choice as a topping for these two ingredient bagels.
How to Make the Plant Based Two Ingredient Bagels
I used my stand mixer with the dough hook attachment to mix and knead the dough, but you can definitely do it by hand as well.

Here's a little variation on a recipe that's really popular around the internet right now! I took the two ingredient bagel recipe and changed it up a bit so it works for a plant-based diet as well!
- 2 cups Self-rising flour
- 1.5 cups Plain coconut yogurt
- 6 tbsp watered-down maple syrup (optional) for "egg wash"
- sesame seeds or bagel seasoning for topping
-
In a stand mixer bowl, combine the flour and yogurt and stir with a spoon until mostly combined. Attach the bowl to the mixer and attach the dough hook attachment.
-
Stir on low speed until the dough just comes together into a ball.
-
Turn the dough out onto a well-floured surface and cut it into six equal portions.
-
Roll each portion out until it's about an inch in diameter, then shape into a bagel by pinching the two ends together.
-
Place your six bagels on a baking sheet lined with parchment or a silicone baking mat and drizzle with the watered-down maple syrup if using. Top with seasonings as well, if using.
-
Bake in a 450 degree oven for 18 minutes or until the bagels just start to turn golden brown on top. Enjoy!
I was so impressed with how these bagels had just the right slightly tangy flavour, just like a regular bagel! The bagels that this recipe makes are slightly smaller than full-size bagels, maybe more like those mini bagels if you’ve seen those.
I had to adjust the amounts of the ingredients a bit compared to the original non-plant-based two ingredient bagels because the plant-based yogurt reacts a little differently than regular yogurt and I think I got it just right. 🙂
Let me know how this recipe works for you if you try it!
