I have to say that I feel like I’m doing a pretty great job of taking advantage of nature’s bounty this summer. I always feel like there’s just so much coming out of the garden at this time of year, as well as so many great things to be found at local farmstands that I just can’t keep up. I feel like I’ve done much better this summer than in past years and I’m extra pleased with myself for adding a peach recipe to my list of “must make” recipes. I always try to have a few go-to recipes that I can whip up quickly when I find myself with an abundance of something like zucchini or basil or rhubarb. Of course, I challenged myself to do a plant-based version of a classic peach cobbler and here we are with this three ingredient peach cobbler recipe!
Ingredients Needed for the Peach Cobbler Recipe
There are only three!
- Fresh peaches
- Cake mix (I like to use my homemade cake mix recipe rather than a boxed mix. I keep a big batch made up in a large glass jar.)
- Plant-based butter substitute (the sticks work really well for this recipe)
Many people will argue that cake mix is, in fact, not just a single ingredient. Those people are right, but when it comes to actually finding the time to whip this recipe up for your family, cake mix feels like you’re only having to add one ingredient and it makes this recipe so much easier to tackle. So don’t fuss at me. 🙂
How to Make the Three Ingredient Peach Cobbler
I started off by slicing my peaches. They really don’t need to be that super thin. Maybe 8-10 slices per peach is about the right size.
Next, you’ll sprinkle the cake mix over the peaches.
Finally, you’ll thinly slice the butter and layer it over the cake mix.
Bake it up until it starts to turn golden brown and serve it with whipped cream or ice cream, preferably on a porch somewhere with a big glass of lemonade.

- 1 box White cake mix (or use a homemade mix, recipe on my website)
- 8 Fresh peaches
- 1/2 cup plant-based butter (1 stick, if you can find it)

Pre heat the oven to 350 degrees and slice the peaches.

Place the sliced peaches into a 9x13" glass casserole dish. Sprinkle the cake mix over top, smoothing it out with a spoon.

Slice the stick of plant-based butter in 1/8" thick slices and layer the slices evenly over top of the cake mix.

Bake for about 45 minutes, or until the cobbler is a light golden brown.

Serve with plant-based whipped cream or vanilla ice cream!
