I’ve been making quite a few zucchini recipes over the few weeks as I’ve been working through all of that beautiful zucchini that’s been coming out of our garden. I usually love zucchini done simply, just sliced up and then sautéed for a few minutes with a bit of olive oil. It’s delicious and it doesn’t really need anything else to make a great side dish. That can get a little boring though after a few weeks, and the zucchini harvest can go on and on from mid-summer right up until fall, so all gardeners really do need a few extra ideas up their sleeve. I thought I’d put together a little collection of recipes all in one place today to give us all somewhere to look if we need to glance over a whole bunch of great ideas all at once. I’m including some of my own recipes as well as a bunch that I’ve found elsewhere that I’ve really loved. I hope you like these too!
