I love a good kitchen trick, and when I heard about this one, it was too simple not to try immediately. 🙂 Here’s how to use lemon juice for fluffier baked goods.
This sounded to me like it could be a bit of an old wives’ tale when I first heard about it, but I thought it was worth a try. I love to add a dash of lemon juice to just about anything I’m cooking to brighten up the flavour a little bit, so why not baked goods as well? And if you can use lemon juice for fluffier baked goods as well? Even better!
How to Use Lemon Juice for Fluffier Baked Goods
Truthfully, I’ll take just about any excuse to do a little baking and I decided to try this out with a chocolate/vanilla marble cake. I thought this would allow me to check for extra fluffiness, but also to see if the lemon juice would add any hint of an unpleasant flavour to the cake. I love lemon flavoured baked goods, but lemon and chocolate are probably not the best combination most of the time. 🙂
Well, I have to say that my cake did seem a bit fluffier! And I was so happy to find that there really wasn’t any noticeable lemon flavour at all.
So here’s what you do:
Anytime that you’re making a baked good using either baking soda or baking powder, add just a dash of lemon juice to the batter. You want about one to one-and-a-half teaspoons.
The lemon juice works to super-activate the baking soda or baking powder and creates a little extra loftiness in your baking!
