Two Ingredient Bagel Recipe (Plant-Based Version)

Here's a little variation on a recipe that's really popular around the internet right now! I took the two ingredient bagel recipe and changed it up a bit so it works for a plant-based diet as well!

Ingredients

  • 2 cups Self-rising flour
  • 1.5 cups Plain coconut yogurt
  • 6 tbsp watered-down maple syrup (optional) for "egg wash"
  • sesame seeds or bagel seasoning for topping

Instructions

  1. In a stand mixer bowl, combine the flour and yogurt and stir with a spoon until mostly combined. Attach the bowl to the mixer and attach the dough hook attachment. 

  2. Stir on low speed until the dough just comes together into a ball.

  3. Turn the dough out onto a well-floured surface and cut it into six equal portions. 

  4. Roll each portion out until it's about an inch in diameter, then shape into a bagel by pinching the two ends together.

  5. Place your six bagels on a baking sheet lined with parchment or a silicone baking mat and drizzle with the watered-down maple syrup if using. Top with seasonings as well, if using. 

  6. Bake in a 450 degree oven for 18 minutes or until the bagels just start to turn golden brown on top. Enjoy!
