High-Protein Chunky Monkey Yogurt Parfait

When I'm craving something a little extra indulgent for breakfast lately, this has been my go-to. This high-protein chunky monkey yogurt parfait tastes absolutely decadent, but it's actually a super healthy option.

Ingredients

  • 1/2 cup Fat-free plain greek yogurt
  • 1 scoop Chocolate protein powder
  • 1 tsp Peanut butter
  • 1/2 Banana sliced
  • 1 tsp Mixed seed blend (flax, chia, hemp, etc.)
  • 1 tsp Semi-sweet chocolate chips

Instructions

  1. In a small bowl, mix together the yogurt with the protein powder until you have a smooth mixture and all lumps have been broken up. Transfer the yogurt mix to another dish for a nice presentation, if desired.

  2. Top the yogurt with banana slices. Scoop the peanut butter into a small dish and microwave for 30 seconds to melt the peanut butter. Drizzle the peanut butter over the bananas in a zig-zag motion.

  3. Sprinkle on the seed mixture and the chocolate chips.

  4. Enjoy!
