
These lemon cake mix cookies truly couldn't be simpler. They're delicious on their own as an easy treat, or they make the perfect base to decorate and share at a spring or summer get-together.
Combine all three ingredients in a medium mixing bowl. Stir until everything is well combined into an even mixture.
Chill the dough in the refrigerator for about 20 to 30 minutes to reduce spreading if desired.
Line a baking sheet with parchment paper. Using a medium-sized cookie scoop, scoop out the dough and place it on the cookie sheet, leaving about an inch and a half between each ball of dough.
Bake at 350° for 16 minutes, turning your baking pan halfway through the baking time. Transfer the cookies to a wire rack to cool completely before drizzling with lemon glaze or decorating.
