3-Ingredient Banana Chocolate Muffins

These three-ingredient banana chocolate muffins are such a great afternoon snack or a quick breakfast. A super easy way to use up those extra bananas at the end of the week!

Ingredients

  • 3 Very ripe bananas
  • 2 Eggs
  • 1 box Chocolate cake mix
  • Chocolate chips (optional)

Instructions

  1. Preheat your oven to 350° and prepare a muffin tin with muffin papers. This recipe should make 10-12 muffins.

  2. Mash the bananas with a fork in a medium bowl, then transfer the mashed banana to a large mixing bowl.

  3. To the mixing bowl, add both eggs and the box of chocolate cake mix. Stir all the ingredients together until a smooth batter forms.

  4. Scoop the batter out equally into your muffin papers, scraping the sides of the bowl down with a rubber spatula to make sure you get all the batter. Sprinkle each muffin top with a few chocolate chips, if desired.

  5. Bake for about 30 minutes, or until a toothpick inserted in the middle of a muffin comes out clean.

  6. Allow the muffins to cool completely on a wire cooling, then store them in an airtight container for up to a few days.
