Sugared Lime Mini Cupcakes

These lime cupcakes are perfect for any summertime celebration! They're easy to make and are a great treat to share at the end of a big barbecue or potluck.

  • 1 box Golden Cake Mix
  • 1 box Lime Jello
  • 3 Eggs (Chia eggs work too)
  • 3/4 cup Water
  • 1/3 cup Lime Juice
  • 1/3 cup Melted Butter
  • 3-4 drops Food Colouring
  • 1 cup Powdered Sugar (mix with 4 tbsp lime juice for glaze)
  • Your Favourite Buttercream Frosting
  • Lime Candies (for garnish)


  1. Mix all ingredients except for the frosting, the glaze ingredients, and the lime candies in the bowl of a stand mixer until well combined. This will be about 20 seconds on low and then 1-2 minutes on medium speed. 

  2. Fill a mini cupcake pan (or several, this recipe makes 72-ish cupcakes) with cupcake liners and fill each cupcake liner with 3/4 full with batter.

  3. Bake for 15 minutes at 350 degrees.

  4. Poke each cupcake 5 times with a toothpick and drizzle about 1/2 teaspoon of the glaze on top. Allow the cupcakes to cool completely.

  5. Place about 1/2 teaspoon of frosting on top of each cupcake and finish off with a lime candy.
