Mexican Fiesta Pasta Salad

This fiesta pasta salad is the perfect thing to try if you're looking for something a little more interesting for your next potluck or BBQ! This is one of our family favourites!

  • 2 Cups Cooked tri-color rotini pasta rinsed in cold water
  • 1 Can Black Beans rinsed really well
  • 1 Can Corn drained
  • 1/2 Red bell pepper chopped into 1/2" pieces
  • 1/2 Cup Cilantro roughly torn
  • 4 Tbsp Lemon juice
  • 4 Tbsp Olive oil
  • 1/2 Tsp Garlic powder
  • Salt and crushed red pepper to taste


  1. Combine the pasta, black beans, corn, bell pepper, and cilantro in a large bowl.

  2. To make the dressing, combine lemon juice, olive oil, garlic powder, salt, and crushed red pepper in a small bowl.

  3. Just before serving, pour dressing over salad and toss to combine.
