Easter Peekaboo Sandwich Cookies

Ingredients

  • 1 box White or golden cake mix
  • 1 box Instant vanilla pudding mix
  • 2 Eggs (or 2 chia eggs)
  • 1/2 cup Melted salted butter
  • 1 container Store bought icing
  • Liquid food coloring

Instructions

  1. Preheat your oven to 350.

  2. In a medium bowl, combine your dry cake mix and your pudding mix.

  3. Add in the eggs and melted butter and stir to combine. As the mixture comes together into a dough, you may need to use your hands.

  4. Roll the dough into little 1.5" balls and place them on parchment lined baking sheets about 1 inch apart. 

  5. Bake for about 12 minutes. Allow cookies to cool completely before moving on to the next step.

  6. When the cookies are cool, use your mini cookie cutters to cut out easter shapes from the middle of half of the cookies. 

  7. Decide what colors you'd like to make your icing. Divide your icing evenly among a few different bowls and use your food coloring to dye each bow of icingl a different color. 

  8. Take one cookie that does not have a shape cut out of it, and place about a teaspoon of icing on it. Place one cookie with a shape cut out of it on top.

  9. Repeat until all your cookies have been sandwiched!
