Soft and Chewy Sprinkle Cookies

These soft and chewy sprinkle cookies are the perfect way to add a little extra colour and fun to your cookie tray this Christmas.

Ingredients

  • 2 1/2 cups Flour
  • 1 tsp Baking soda
  • 1/4 tsp Salt
  • 2 tbsp Corn starch
  • 1 1/2 sticks Room temperature butter or plant-based substitute
  • 1 1/2 cups Sugar
  • 2 Eggs or plant-based substitute
  • 2 tsp Vanilla
  • 1 cup Sprinkles

Instructions

  1. Combine the dry ingredients in a medium bowl and set aside.

  2. Cream together the butter and sugar in the bowl of a stand mixer fitted with the paddle attachment, then add in the eggs and vanilla and mix at medium-high speed until everything is well combined.

  3. With the stand mixer on the lowest speed, slowly add in the dry ingredients and continue mixing until everything is combined. Chill the dough for at least an hour, or overnight.

  4. Place the sprinkles in a small bowl. Scoop out the dough in 1.5 tablespoon increments and roll into little balls. Roll the dough balls in the sprinkles until coated on all sides. Place the cookies on a silpat-lined baking sheet with about 1.5 inches of room between them.

  5. Bake at 350° for about 13-14 minutes, rotating the baking sheets halfway through. Allow the cookies to cool on the sheet for about 3-5 minutes, then transfer to a cooling rack to finish cooling completely.
