Plant-Based Cowboy Casserole

The plant-based cowboy casserole: The perfect thing to bring to a Super Bowl party, or just any potluck gathering where you want something fun and indulgent that will be enjoyed by meat-eaters and plant-eaters alike!

Ingredients

  • 1 Yellow onion
  • 1 tbsp Taco seasoning
  • 1/2 tsp Garlic powder
  • 1 can Black beans
  • 1 pack Plant-based ground beef substitute (or use another can of beans, maybe pinto?)
  • 1 can Diced tomatoes with green chilis (such as Rotel)
  • 1/2 cup Plant-based cream cheese
  • 1 can Corn
  • 1 bag Tater tots
  • 1 cup Plant-based shredded cheddar cheese

Instructions

  1. Preheat the oven to 375. Dice the onion and sautee until translucent in a medium saucepan.

  2. Add all other ingredients to the saucepan, except for the tater tots and the shredded cheese. Stir and cook for about 5-7 minutes on medium heat until all the ingredients are well-combined.

  3. Dump the contents of the saucepan into a 9x13 casserole dish and spread them out evenly.

  4. Top the casserole filling with a single layer of frozen tatertots. Then sprinkle the shredded cheese over the top.

  5. Cover the casserole with aluminum foil and bake for 30 minutes. Then remove the aluminum foil and bake for another 15 minutes.
