These easy Oreo truffles are a great addition to any potluck dessert table and they're perfect for any holiday or celebration!
Grind Oreo cookies (filling included) in a food processor until they reach a fine crumb texture.
Combine cream cheese and Oreo cookie crumbs in the bowl of a stand mixer fitted with the paddle attachment and mix until well-combined. The mixture should resemble a ball of chocolate dough.
Roll mixture into 1.5" balls, place on a cookie sheet lined with parchment or a non-stick baking mat, and chill for 30 minutes.
Coat each truffle ball in melted chocolate, place back on the cookie sheet and immediately sprinkle with a pinch of coloured sprinkles.
Chill coated truffles ball in the fridge until fully set, then transfer to mini paper cupcake liners on your choice of serving dish.
